we're moving!

...to the apartment next door. it's a beautiful, upgraded version of the studio we live in now. i mean, there's a wall that separates the kitchen from the bed! and multiple windows! friday can't come soon enough.

yesterday was a sad day, as one of my favorite musicians passed. but the beauty of music is, of course, that he is not truly gone. i can listen to his distinctive voice whenever i please, and today i'm doing just that. a lot of that!

chocolate muffins

these are a cross between brownies and cupcakes -- i adapted them from my banana muffins, so let's just call them chocolate muffins (for the sake of being able to eat them for breakfast)!

chocolate muffins (makes 9 large muffins)
 
1 1/2 cups almond flour
1/2 cup cocoa powder
1/4 tsp baking soda
pinch of salt
1/4 tsp cinnamon
1/2 cup honey
1 ripe banana, mashed
1/2 cup coconut oil
3 eggs
1 tsp vanilla extract

preheat oven to 350 degrees f. mix dry ingredients in a large bowl. mix wet ingredients in a separate bowl. add wet to dry, stir to combine. pour mixture into lined muffin tins* and bake for about 17 minutes. allow to cool completely and enjoy.

*i sprinkled mine with a little pink sea salt before baking.

happy friday! i'm not crazy about dr. dog, but i love their version of this architecture in helsinki song. it instantly lifts my mood, which is much appreciated today. i dug up all of my textbooks, papers, and research from the storage unit for thesis-writing purposes. my apartment (and brain) will be quite messy from now until june.

chocolate avocado pudding

i'd been thinking about homemade chocolate pudding ever since i saw it listed as a special at compote, so i followed this recipe for chocolate avocado pudding. it's made with avocado, banana, cocoa powder, vanilla extract, cinnamon, and a little bit of honey (my addition). it's a perfect dessert -- rich, yet light and airy.
