scenes from the weekend

this weekend, it was 80 degrees. there was no rain. and i had no homework.

shrimp tacos.
from this place (best place ever).
favorite sunny day snack: giant pickles!

green tea mint lemonade.
sun + beer = happy drew.
happy hour.
skipped the gym and spent some quality time with my yoga mat.
sandwich for dinner, again.

balsamic tofu sandwich

2 slices whole wheat bread 
hummus (i use whole foods lemon hummus) 
2 plum tomatoes 
fresh basil
1/2 block extra firm sprouted tofu 
2 tbsp olive oil 
3 tbsp balsamic vinegar 
fresh lemon juice 
salt and pepper
    wrap tofu in paper towels and place it between the counter and a heavy item (i used a cast iron skillet) for 20-30 minutes to press excess liquid out of it. preheat oven to 400 degrees. mix together olive oil, balsamic vinegar, lemon juice, and a pinch of salt and pepper to make the tofu marinade. cut the tofu length-wise into thin strips, then lay on a baking sheet. pour marinade over the strips and bake for about 30 minutes, or until tofu is slightly crispy. toast bread and top it with hummus, basil, tofu strips, and sliced tomato. top with salt and pepper and a squeeze of fresh lemon juice.
